There's nothing more satisfying than slicing into a perfectly smoked brisket with a rich bark, juicy interior, and incredible flavor. While smoking brisket takes patience, the right seasoning and technique make all the difference.
Ingredients
- 1 Whole Beef Brisket (10–14 lbs)
- 2 tbsp Yellow Mustard (binder)
- Casks-N-Que BBQ Rub GPS or Pyro Candy
- Apple or Oak Wood Chunks
- Beef Broth (optional)
Instructions
1. Trim the Brisket
Remove excess fat, leaving about ¼ inch on the fat cap.
2. Apply the Rub
Spread a thin layer of mustard over the brisket and coat generously with your favorite Casks-N-Que seasoning.
3. Smoke Low and Slow
Preheat your smoker to 225°F. Place the brisket fat side down and smoke until the internal temperature reaches 165°F.
4. Wrap
Wrap in butcher paper or foil and continue cooking until the internal temperature reaches 203°F.
5. Rest
Let the brisket rest for at least one hour before slicing against the grain.
Pitmaster Tip
Don't rush the resting process. A properly rested brisket stays juicy and slices beautifully.
